avocado hummus with crispy tofu

This avocado hummus with the addition of chickpeas is a tasty, healthy and nutritious option for breakfast or a perfect snack when served with the crispy tofu. It’s vibrant, delicious and versatile. If you don’t fancy the tofu fill a board with blanched and raw vegetables, olives and grilled bread.

Avocado Hummus Ingredients:

  • 240g cooked or canned chickpeas
  • 1 avocado, peeled, stone removed and roughly chopped
  • 2 tablespoons tahini
  • The juice and rind of 1 lemon
  • 1-2 teaspoons Azada Olive Oil & Crushed Garlic
  • A generous pinch sea salt and freshly ground black pepper

Crispy Tofu Ingredients:

  • 100 grams tofu
  • 2 tablespoons rice flour
  • A generous pinch sea salt and freshly ground black pepper
  • 2 tablespoons Azada Olive Oil & Crushed Garlic

Preparation time: 10 minutes

Cooking time: 5-10 minutes

Serves: 2-4 people

Prepare the avocado Hummus step by step:

  1. Preparing the hummus. Place all of the ingredients together in a food processor.
  2. Blend all of the ingredients until it forms a smooth and creamy paste.
  3. Add more seasoning to taste (if necessary) and set aside.

Prepare the crispy Tofu:

  1. Cut the tofu into small cubes. Combine the flour, salt and pepper in a shallow dish. Add the tofu and toss to coat well.
  2. Heat a little of Azada’s Olive Oil & Crushed Garlic in a sauté pan and cook the tofu until golden and crisp. Drain on kitchen towels.
  3. Serve with the hummus.

Chef’s tip

Before coating the tofu press it firmly between layers of paper towels to remove any excess moisture.
