End-of-season vegetables are often more sweeter than when it is at its seasonal height. I mean this salad is one of the simplest and yet most deliciously satisfying of all salads.

This salad is perfect as nothing is required of the cook – this salad practically stands for itself. Perfectly ripe tomatoes in all shapes, soft balls of mozzarella resembling drops of freshly falling snow, fragrant basil leaves and the tastiest of Mediterranean olive oils brings you heaven on a plate. All you need to do is savour and reflect, rather than sigh over your favourite seasons fast approaching change.

Serves 1

1 tablespoon Azada Olive Oil & Orange
200 grams cherry, baby kumato, baby plum, Sun Gold and yellow cherry tomatoes, halved
½ teaspoon sea salt
75 grams mozzarella balls
A small handful of fresh basil leaves

Mix the tomatoes, salt and Azada’s Olive Oil & Orange in a medium size mixing bowl. Let it stand, mixing occasionally until the juices from the tomatoes infuse into the olive oil.

Mix in the mozzarella balls to ensure the tasty juices flavour the cheese. Season with freshly torn basil leaves and set aside at room temperature until serving.
