cauliflower, cheese and leek gratin

Oh now, who doesn’t love the creamy deliciousness of an old-school vegetable gratin, made with Cauliflower, Cheese and Leek? It combines some of our favourite ingredients and is simply perfect on its own.

Ingredients:

  • 15 ml Azada Olive Oil & Thyme
  • 1 leek, trimmed and sliced into thick rounds
  • 1 small cauliflower, trimmed and cut into florets
  • 120 ml vegetable stock
  • 30 ml cream
  • 60 grams gluten free ciabatta or sourdough
  • A few sprigs of fresh thyme to garnish

Sauce Ingredients:

  • 1 tablespoon Azada Olive Oil & Thyme
  • 1 ½ tablespoons plain flour (gluten free equivalent)
  • 175 ml milk
  • Sea salt and freshly ground black pepper
  • A generous pinch of freshly grated nutmeg 
  • 75 grams gruyere cheese, grated (divided into two)

Preparation: 

Pre-heat the oven to 200°C (conventional) / 180°C (fan) / gas mark 6 / 400°F. Heat the Azada’s Olive Oil & Thyme in a large, heavy based casserole, add the leeks and cauliflower and season well with salt and pepper. Cover with the lid and cook for 15 minutes. Add the vegetable stock and cream and cook for a further 10 minutes, uncovered. Sauce. Heat Azada’s Olive Oil & Thyme in a small saucepan over a medium heat. Add the flour, whisk to a smooth paste and add half the milk, continuing to whisk. Once the sauce begins to thicken add the remaining milk and the nutmeg. Season with salt and pepper. Continue to whisk until the sauce is thick, glossy and smooth. Add in half of the gruyere and stir well to combine. Pour the sauce over the vegetables and mix well. Blitz the bread in a food processor with the remaining cheese. Place into a deep round baking dish (or equivalent), cover with the cheesy breadcrumbs and bake for around 15–20 minutes until golden and bubbling. Serve with a sprig of thyme and a crisp green salad.

Chefs Tip

If you want to add more vegetables to your gratin, add 250 grams of diced potato to the gratin to create a more substantial dish. Add the diced potato at the same time as the leeks and cauliflower.
