Why Are Egg Yolks Yellow or Orange?
Egg yolks get their colour from carotenoids. Carotenoids are a class of more than 750 naturally occurring pigments synthesized by plants, algae, and photosynthetic bacteria (1). These richly colored molecules are the sources of the yellow, orange, and red colors of many plants. If you haven’t guessed, carotenoids give colour to winter squash, carrots, corn, tomatoes, sweet potatoes and even canaries, flamingos, salmon, lobster, prawns.
